Croissants are just around the corner for Saturday Athens Farmers Market

Maeve, Sue and I worked on butter croissants today. 64 light and fluffy croissants came out of the ovens. Bruce and Zoé gave their thumbs up. Sue was not sure that the croissants we made were what croissants are supposed to be like. We had Zoé taste one of them (before dinner) and she gave her verdict : "This is like the croissants in Paris." Needless to say that we have three very proud bakers, tonight. Sweet dreams, Maeve and Sue...You two really did well today! It is a delight to have you as apprentice bakers.

Testing new quiches

Loved the look of these quiches so decided to try them out.
We should start offering them soon at the AFM on Saturday.



Pâte brisée, carrots and zucchinis and itlian herbs.


Very attractive quiches, indeed.

Our quiches...top ones are broccoli, bacon and bluecheese, bottom ones are zucchini, onion and goat cheese.


Tartelettes from top to bottom : almond raspberry, almond pear and almond apricot. I love the pear ones....
